Mmmmmm…Chili
Ok, here’s the recipe for Colin’s Crazy Chili (3-Alarm version)

(Note: don’t even try this one, Chargers fans: you can’t handle the Crazy Chili!)
Ingredients:
1 lb ground beef
1 lb chuck or round steak
2 Jalepeno peppers, chopped
1 Cayenne pepper, chopped
1 Serrano pepper, chopped
1 medium onion, chopped
4 cloves garlic, minced
2 cups canned crushed tomatoes
1 can dark red kidney beans, drained
1 cup beef broth
1 cup V-8 juice
1 cup Bass Ale (make sure to drink the rest)
2 tbs chili powder
2 tsp ground cumin
1 bay leaf
1/2 tsp oregano
ground black pepper
kosher salt
ground cayenne pepper
cooking oil
Directions:
- Cut the steak into 2-inch chunks, Using a food processor on “pulse” mode, coursely grid the steak, making sure to leave some good size chunks. Put the ground steak aside into a bowl and sprinkle it with a couple pinches of kosher salt.
- Chop all the chili peppers, making sure to test each one for hotness. Adjust amount and type of chili peppers depending on the hotness of the peppers and desired alarm level.
- Pre-heat a large pot on medium-high add add a small amount of cooking oil. Add peppers, onion and garlic to pot. Add ground pepper to taste.
- Cook on medium-high heat, stirring frequently, until onions are translucent.
- Do not breath the steam from the pot at this point or you will be sorry.
- Add the ground beef and steak. Cook on medum-high heat, stirring frequently, until the meat is completely browned.
- Add crushed tomatoes, beef broth, V-8 juice and Bass Ale.
- Stir in chili powder, cumin, bay leaf and oregano.
- Reduce heat to low, cover and simmer for 1 hour, stirring occasionally.
- Remove cover and stir in kidney beans.
- Taste the broth, and add salt and cayenne pepper to taste.
- If serving immediatly, Simmer for another 10 minutes, otherwise remove from heat and refridgerate.
Serve with tortilla chips, sour cream, shredded cheese and Jalepenos.
